Buck Tui is what happens when championship-level Kansas City barbecue technique meets a Thai pantry with equal conviction. Chefs Ted and Pam Liberda built one of the most genuinely original concepts in the metro, and it doesn't read as a novelty—both halves of the menu are cooked with intent and equal respect. Nothing else in Overland Park, or the city, eats quite like it. The brisket and burnt ends hold up against any dedicated KC pit, smoked by pitmasters with contest hardware to their name. Then the menu turns and hands you khao soi, green papaya salad, and a house-made Thai sausage fragrant with lemongrass and chile. Order across both columns, because the collision is the whole point: sweet, tomato-glazed burnt ends on one plate and a curry-noodle bowl on the next, each cooked straight rather than watered down into fusion for its own sake.
A fusion with nothing gimmicky about it—Buck Tui cooks KC brisket and burnt ends at a championship level, then plates khao soi and house Thai sausage beside them. The two traditions get equal respect, and the collision is the whole thrill.
